Tall Provisions is the vision of chef and owner Adam Alderin, a culinary veteran with over 20 years of experience. After graduating from the Culinary Institute of America, Adam went on to earn national recognition as a James Beard Rising Star Chef of the Year semifinalist in 2008.

Following a move to Littleton, NH in 2015, Adam and his wife, Lori, breathed new life into The Beal House, turning it into a beloved local dining destination. Now, they’re bringing that same passion and creativity to Main Street with the opening of Tall Provisions—a place where community, craft, and flavor come together.

After nine successful years co-owning The Beal House, Lori Alderin is turning her attention to the creative heart of hospitality. As Tall Provisions opens its doors in Littleton, NH, Lori is excited to focus on the elements she loves most—crafting an exceptional guest experience through thoughtful design, distinctive concept development, and inviting aesthetics. Her vision will help shape Tall Provisions into a space that feels as good as it tastes.

Chef Pete brings a refined touch and deep-rooted passion for seasonal, ingredient-driven cuisine to the Tall Provisions team. With a strong background in some of Philadelphia’s most respected kitchens—including FORK and Trattoria Carina—Pete has honed his craft with a special focus on pasta making and rustic Italian techniques. Before joining The Beal House in 2023, he also explored the world of fermentation and flavor through hands-on work in Vermont’s cider production scene. At Tall Provisions, Pete blends culinary precision with creative flair, helping to shape a menu that’s both comforting and inspired.
